Banana Coconut Muffins
INGREDIENTS
1 1/2 cups Self raising flour (sifted)
1 cup Desiccated coconut
1 cup Caster sugar
1 cup Mashed banana (2-3 bananas)
1 cup Milk
1 Egg
1 teaspoon Vanilla essence
DIRECTIONS
1. Preheat the oven to 160* C
2. In a large bowl combine flour, coconut and sugar
3. In a large jug or processor blitz banana, egg, milk and vanilla
4. Add wet ingredients to the dry mix
5. Stir until well combined
6. Pour mix evenly into muffin pans
7. Bake for 40-45 minutes
8. Cool on a wire rack
